Aapam

Aapam - South Indian Rice Pancakes like Dosa made with rice and urad dal batter. You can keep the batter in refrigerator for 4 to 5 days also and can serve these aappams at breakfast.



Recipe Ingredients

* Plain Rice - 1 cup

* Par Boiled Rice - 1 cup

* Urad Dal - 1/4 cup

* Baking Soda - 1/4 tsp

* Fenugreek Seeds - 2 tsp

* Coconut Water - 1 cup

* Salt - 1/4 tsp


Preparation

First wash rice separately and soak for 4 to 5 hours along with Par boiled rice and fenugreek seeds. Separately wash and soak urad dal for 3 hours.

Grind both the rice into a smooth paste. Ensure that batter is smooth and not coarse. Similarly grind the urad dal to a fine paste. Mix both rice and urad dal paste and add salt and leave it aside for 8 to 10 hours to ferment.

After it is fermented add baking soda and coconut water and mix well to form a smooth batter.

Now take a medium size non-stick kadai(wok) and put it on gas. Pour a laddle full of batter in it and rotate the kadai in clockwise direction using both your hands. This way smooth batter will spread on whole of the kadai. Cover the kadai with a lid and let it cook on medium gas for two minutes.

Take it out from the wok and serve with coconut chutney and Sambar.
